Spinach Brownie

This is an old image I took and never posted a review. It was a spinach “brownie” which really wasn’t a brownie at all but was baked in a flat pan and cut into squares.
Ingredients: Spinach, onion, flour, mozzarella cheese, some other things
Taste: They tasted pretty good, almost like a quiche without the egg and crust. I would have preferred a quiche though.
Texture: Too soggy. Only the outside edges had a little crispiness. The rest of it was almost inedible. I also got tired of eating it… it would have been better for company or to make a smaller portion.

Zuppa Toscana

Ingredients: Italian sausage, red pepper flakes, bacon, onion, garlic, chicken broth, potatoes, heavy cream, spinach
Taste: It tasted pretty close to the version at Olive Garden! Kinda spicy too. I’m not sure if the bacon was really necessary- I guess it adds some flavor but I don’t remember there being bacon in Olive Garden’s Zuppa Toscana. Overall the soup was a pain to make.
Texture: I have to experiment with how small or large to make the ingredients. The onions and garlic came out fine even though I didn’t cut them as small as the recipe said to. The potatoes were supposed to be “sliced thin”- whatever that means. I sliced them into thin little squares but I thought that was a weird shape for potato pieces. I tore up the spinach but it was still too large. And I removed the sausage from the casings and tried to break it up but I left a few chunks thinking they would crumble down- that didn’t happen. I like the sausage evenly crumbled so next time I’ll chop it a little more. It also says to add the spinach right before you serve, so I only added a little. I’ll add more as I reheat this soup over the next few weeks.
Portion: This recipe makes enough for “6”. Six people eating this as their main course, maybe. I had two bowls and there were probably at least 8 bowls left.

Spinach & Ricotta Calzone

Ingredients: Spinach, onion, garlic, ricotta, mozzarella, parmesan, pizza dough
Taste: This actually tasted a lot better than I thought. Or maybe I was just really hungry by the time it was done. We’ll see because I have three more of them to eat. I used some Ragu as a dipping sauce of course.
Texture: The crust came out a little floury-looking, but it tasted great! It wasn’t even that dry- I could have skipped the dipping sauce.
What I really have to say about this was that it was difficult to make. The recipe called for so much spinach that didn’t fit in my frying pan so I didn’t use all of it. I was trying to rip the spinach leaves apart and get rid of the stems because I was afraid they’d be too big. I mixed up the recipe and then my pizza dough didn’t want to be rolled out…maybe I didn’t let it warm up enough? I ended up making 4 calzones instead of 6…didn’t use all of the filling because I just couldn’t get it to fit. And then the calzones opened up while baking and the cheese and spinach spilled out all over. Meanwhile I had flour and oil all over the place. They were a pain to make but I’m glad I did them once…next time it’s to the local pizzeria for me!
