Recipe: Sweet & Sour Meatballs

I got this recipe during an online recipe swap from my friend Elyse!

Ingredients:

Meatballs: Ground beef, egg, bread crumbs, milk, salt, onion, Worcestershire sauce

Sauce:  Vinegar, soy sauce, brown sugar, cornstarch, crushed pineapple, green peppers

Taste:  The sauce on these is really tasty.  I was able to eat them for dinner 3 or 4 nights in a row with no problem.  They go really well with egg noodles, or on mini buns (as sliders).  It’s truly a sweet and sour experience, even if you don’t really like soy sauce or pineapple.

Texture:  I had made these before with pineapple chunks, but I much preferred the crushed pineapple I used this time (the smaller pieces make it easier to eat the sauce- especially because I don’t like eating pineapple on its own).  You have flexibility as to how large to make the meatballs- but I have found that this recipe comes out pretty well.

Domino’s Cheesy Bread

Taste: I have always loved cheesy bread- it’s one of my favorites.  I like it better than Domino’s pizza and wouldn’t even order pizza if I could (I still order pizza because eating just cheesy bread in one sitting is guaranteed to give me a heart attack).  Perfect blend of cheeses, oil, salt and spices.  Even better with the marinara dipping sauce (balances out the intense fat flavor).

Texture: Greasy, cheesy, with maybe a little too much plain crust around it (what’s the point of crust- it doesn’t have cheese on it!).  Can get a little too soft and mushy at times.

Overall Rating: 9/10

Domino’s Cali Chicken Bacon Ranch Pizza

Toppings: Chicken, bacon, tomatoes, ranch dressing, cheese

Taste: This was better than I thought it would be.  The flavors worked together really well and nothing was overpowering.  If you add ranch dipping sauce, it gets even better.  Once you use the extra sauce, you cannot go back to eating it plain.  Domino’s crust may have improved, but I still can’t eat it without some dipping sauce either.

Texture: This has a healthy amount of toppings without getting too heavy.  With the hand-tossed (original) crust, it was easy to hold and eat, and even dip.

Overall Rating: 9/10

Oreo Funnel Cake

Taste: Pretty much a regular funnel cake with some (stale) “Oreo” cookie crumbles on top.  It was good but not amazing.

Texture: Funnel cake is always messy but awesome.  The cookie crumbs didn’t stick to the dough (even more so than the powder doesn’t stick), so we pretty much ended up eating funnel cake and then Oreo cookie crumbs.

Overall Rating: 6/10

Recipe: Thai Chicken Lettuce Cups

If you know anything about me, you know that it’s VERY rare for me to eat a meal with absolutely no carbs.  I also feel that lettuce is a waste of time- it gives me no enjoyment to eat it.  However, I decided to try this lettuce cup recipe as something different.  It wasn’t as good as the lettuce cups I had recently at a restaurant, but it was pretty good nonetheless.

Ingredients: Lettuce, chicken, garlic powder, peanut sauce, cucumber, scallions, carrots, rice vinegar, cilantro, crushed red pepper

Taste: Not bad.  I could adjust the spiciness by the amount of red pepper added.  The peanut sauce (which I bought as a gamble, didn’t see any other options at the store) worked out pretty well.  So did the rice vinegar, which I was unsure of at first.

Texture: These were more like lettuce bowls, or tacos.  I picked the lettuce mentioned in the recipe (romaine) but the leaves were so big!  Also, I would reduce the amount of rice vinegar next time because it was running all over the place.  These weren’t the easiest or cleanest things to eat.  I also don’t enjoy the texture of cucumber too much, so next time I would use less, and even experiment with other things like adding peanuts.

Recipe: Curry Chicken Salad

Ingredients: Yogurt, mayo, curry powder, chicken, grapes, almonds, cilantro, salad greens, lemon juice, salted pita chips

Taste: This was pretty good.  Not too spicy (I could have handled more), and the cilantro wasn’t overwhelming (I was worried when I put it in- it seemed like a lot, plus I was using dried instead of fresh).  It definitely wasn’t bland though because of the curry powder.  The different elements (grapes, almonds, etc.) seemed to go together pretty well.

Texture: If you know anything about me, I don’t like salad.  I think the chicken mixture would have been too strong without the greens, but it might have been good on a sandwich or something.  I wasn’t sure how much chicken mixture to add to how much greens, pita chips, etc.  I ended up eating the chips on the side and not really mixing them in or anything.  All the different textures (chips, greens, chicken, grapes, almonds) were kind of awkward to eat together, especially the chips.  But they did make the meal more robust.

Bottom line, I will eat this again (I have leftovers) and I might even make it again.
